Finca Familiar Sumarroca Brut Reserva Cava, Barcelona, Spain
Sumarroca Brut Resrva is made with selected grapes from the varieties Maccabeu, Xarello, Parellada and Chardonnay. The process starts with the settling process to get rid of the suspended particles. Then, the fermentation takes place at 15ºC for 3 weeks. Once the grapes have fermented, the assembly takes place, with different proportions of the four varieties.
So that the 2nd fermentation takes place in the bottle, they add a small amount of sugar and selected yeasts. Then, the bottling (tirage) is carried out, placing the bottles in the cava horizontally or in stacks. As a result, there will be a small increase in the alcoholic strength of the wine. This way, the pressure will increase up to 6 atmospheres.
Once the fermentation has ended, the bottle will rest for its ageing (crianza), in contact with the sedimented lees, for a minimum of 2 years. During this time, it will acquire the optimal organoleptic features of a high-quality cava.
After this time, these sediments (the yeasts from the 2nd fermentation) will be decanted to the neck of the bottle, which will be pointing down. Then, the disgorgement will take place to remove the sediments from the neck of the bottle, adding a small amount of liqueur d’expédition and finally closing it with a top-quality cork.S
